Shun Eto was born in Tokyo, but grew up in sunny Queensland, Australia. He fell in love with food & wine at a young age. After boarding school, he travelled the world solo & found his way to Ecole Hoteliere de Lausanne, Switzerland (recently named Best Hospitality School in the World). After his Swiss education in hotel management, he completed a management trainee program at the world-famous Oak Door at the Grand Hyatt in Roppongi, Tokyo.
Immediately following his successes in Japan, he returned to Sydney, Australia. He worked at Kable's Restaurant (Four Seasons Sydney), Berowra Waters Inn, Icebergs Dining Room & Bar, Nomad Sydney, Pascal Bar & Grill (QT Melbourne), Yamagen (QT Gold Coast) & Capital Bar & Grill (QT Canberra) and Gowings Bar & Grill (QT Sydney) to name a few.
In 2015, Shun became the Group Curator of Wine at QT Hotels & Resorts for 3 years & at the end of 2018 became the Group Curator of Wine for Ovolo Hotels (Australia's fastest growing hotel group) looking after the beverage program for Australia & Ovolo Central, Hong Kong till January 2020. After that he worked for Merivale at Mimi's and Fred's for year.
In 2021 he opened Shell House as Wine Director for Point Group and consulted with the opening of Lou Lou Bistro in North Sydney and the setup of group beverage structure for Etymon Projects.
He is now building a wine startup in Sydney, Australia called Nama Wine. Plus co-creating another wine brand called Elle Wines with Tim Robards.
He as well continues to curate quality wine & drinks for restaurants, bars & hotels around the country.
